Carla’s Parmesan Chicken

1 to 1  1/2 cups bread crumbs

1 teaspoon basil

1 teaspoon oregano

1 teaspoon thyme

1 teaspoon garlic salt or powder

1/4 cup parmesan cheese

Mix all together and use to bread chicken.

Fry breaded chicken till golden brown.

Place in pan and drizzle with spaghetti sauce.

Bake at 350 till chicken is done.  Add some mozzarella cheese to the top towards the end of the cooking time.

Also works great for eggplant.

Cheese Enchiladas

SAUCE

4 cups water

1 /4 cup tomato paste

1  1/2 ounce butter or margarine (3 TBS)

1 teaspoon salt

1/2 Tablespoon chili powder

1/2 Tablespoon paprika

1 Tablespoon beef base

Dash cayenne

Add all ingredients in a pan and bring to a boil.

Mix 1/2 cup flour with 1 cup water.  Add to boiling sauce till thick.  You may need a little extra.

Lightly fry corn tortillas in oil.  (about 15 tortillas)

Coat bottom of glass pan with sauce.

Pour some sauce on a plate.  Put 1 tortilla in sauce.  Flip.  Add grated cheese.  Roll. Place in 9X13 pan.  Repeat.  You may want another smaller pan too.

Pour remaining sauce over tortillas in pan.  Bake at 350 degrees for 20 minutes or until warm and bubbly.

We usually do 1  1/2 times recipe for our family and do more shells and use two pans.  It just depends how saucy you like it.

Lime Fajitas

When the chicken, pepper, and onions are all done add

1 clove garlic

1 Tablespoon cilantro

1 Tablespoon lime juice or the juice of a fresh lime or two to taste

Serve on flour tortilla with sour cream, cheese, and salsa.

Fajita Seasoning Mix

1/4 teaspoon sugar

1/4 teaspoon cumin

1/4 teaspoon paprika

1/4 teaspoon chili powder

1/4 teaspoon oregano

Mix all together and add to meat and vegetables in pan.  You may want to add a little water when you add it to the pan

Olive Garden Italian Dressing

1/2 cup mayonnaise

1/3 cup white vinegar

1 teaspoon vegetable oil

2 Tablespoons corn syrup

2 Tablespoons parmesan cheese

2 tablespoons romano cheese

1/4 teaspoon garlic salt or 1 garlic clove minced

1/2 teaspoon italian seasoning

1/2 teaspoon parsley flakes

1 Tablespoon lemon juice

sugar (optional)

Mix all ingredients in a blender until well mixed.  If this is a little too tart for your own personal tastes please add a little sugar.

Zupa Toscanna Soup – Olive Garden

1  1/2 cups spicy sausage links — 12

2 medium potatoes, cut in half lengthwise, then cut into 1/4″ slices

3/4 cup onions, diced

6 slices bacon

1  1/2 teaspoon minced garlic

2 cups kale leaves, cut in half, then sliced

2 Tablespoons chicken base

1 quart water

1/3 cup heavy whipping cream

Preheat oven to 300 degrees.  Place sausage links onto a sheet pan and bake for 25 minutes, or until done; cut in half lengthwise, then cut at an angle into 1/2 inch slices.

Place onions and bacon in a large saucepan and cook over medium heat until onions are almost clear.  Remove bacon and crumble.  Add garlic to the onions and cool an additional 1 minute.  Add chicken base, water, and potatoes, simmer 15 minutes.  Add crumbled bacon, sausage, kale, and cream.  Simmer 4 minutes and serve.

Calzone (see after recipe for other combinations)

Pizza dough (your favorite recipe)

1 pound sausage (mild or hot, cooked and crumbled)

1 pound mozzarella cheese, grated

1 green pepper

1 onion

pepperoni

olives, sliced

Divide pizza dough into 5-6 ounce pieces.  Roll out round to about 6″ diameter.  In center of dough place sausage, cheese, any other fillings you want from the above list or any others you like.  Pull dough around filling and pinch ends together.  Place on greased baking sheet.

Brush olive oil over the top of dough and sprinkle with grated parmesan cheese.

Bake in 350 degree oven for 15 minutes.

Serve with spaghetti sauce to dip.

Philly Cheese Steak Calzone

  • Thinly sliced, cooked steak
  • Mozzarella
  • Sauteed onions and green peppers

Tex-Mex Calzone

  • Black beans
  • Corn

  • Shredded Mexican blend cheese

  • Halved, cooked meatballs

Garden Veggie Calzone

  • Cooked broccoli

BBQ Chicken Calzone

  • Cooked chicken

  • Sauteed red onions

Breakfast for Dinner Calzone

  • Scrambled eggs
  • Shredded Cheddar cheese
  • Hash brown potatoes
  • Cooked, crumbled bacon

Dessert Calzone

  • Chocolate hazelnut spread
  • sliced strawberries
  • dusting of confectioners’ sugar before serving

Chicken Corn Casserole

2 eggs

1 cup sour cream

1  – 14 ounce can creamed corn

1  1/2 cups cooked corn

3  – 4 ounce cans green chillies

2  – 12 ounce cans chicken (do not drain) or 2 cups shredded chicken

1 cup chicken broth if using shredded chicken

1 box Jiffy cornbread mix

  1.  Mix together eggs and sour cream.  Add corn, chillies, and chicken.  Mix well.
  2. Add cornbread mix.
  3. Bake in a 9X13 dish sprayed with non-stick cooking spray at 375 for 1 hour.

Spring Salad

Red leaf lettuce

Spring Salad Mix at Sams or get an assortment of leaf lettuce (no iceburg lettuce

2 cans mandarin oranges

Toasted Almonds

 

DRESSING

2/3 cup vinegar

1  1/2 cup sugar

1 teaspoon salt

3 teaspoons chopped onion

1 teaspoon mustard

1  1/2 cup vegetable oil (no canola oil – it is more bland and separates)

Blend first 5 ingredients in a blender.  Add oil and blend again.

Make your salad on your plate of lettuces, oranges, almonds.  Pour on some dressing and enjoy.

Tuna Screwdle

16 ounce bag of spiral noodles (or your favorite kind)

1/4 cup oil

1  1/2 -3 teaspoons dill weed

1 1/2 – 3 teaspoon season salt

16 ounce sour cream

2 cups mayo

1  1/2 Tablespoon lemon juice

1/2 Cup to 1 Cup chopped red onion

1/2 t0 1 Cup chopped celery

1 can tuna – drained

  1. Cook and drain noodles.  Put in a bowl while warm and add oil, dill weed, and season salt.  Mix then put in fridge till cool.
  2. When cool mix sour cream, mayo, lemon juice together in a small bowl.
  3. Mix sauce into pasta.  Add tuna and vegetables.
  4. If you need you can add more sauce in the same ratio as the recipe.  If there are leftovers just add some mayo the next day to freshen up the salad.
