Cafe Rio Sweet Pork copycat (This is Stephanie’s Recipe)

Ingredients

  • 3 pound pork shoulder/butt roast
  • 16 ounces Coca-Cola soda divided (*do not use diet soda. The sugar in regular soda is needed.) (We used Root Beer and it was fine)
  • 1/4 cup water
  • 1 teaspoon garlic salt
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (4 ounces) diced green chilies
  • 1 can (10 ounces) red enchilada sauce
  • 3/4 cup packed brown sugar

Instructions

  • Spray inside of a large crock pot with cooking spray. Place pork roast inside. Pour 8 ounces of Coca-Cola ( I used a measuring cup) and water around pork. (It does not need to cover roast) Sprinkle evenly with garlic salt, salt and pepper. Cover with lid and cook on high heat for 6 hours OR cook on low heat for 8 hours.
  • Remove pork from crock pot and transfer to cutting board. Discard liquid from crock pot. Shred pork with two forks, and remove any fat.
  • In a blender or food processor, blend the remaining 8 ounces Coca-Cola, diced green chilies, enchilada sauce and brown sugar. Blend until smooth.
  • Place shredded pork back in crock pot. Pour enchilada sauce mixture over the shredded pork. Cover crock pot with lid and cook another 1 to 2 hours on low heat. Serve pork in burritos, salads and tacos!

Crockpot Mississippi Pot Roast-Wendy Osborn

Ingredients:

  • 3 pound chuck roast
  • 2 Tablespoons olive oil
  • Salt and pepper to taste
  • 1 packet ranch dressing mix
  • 1 packet dry onion soup mix
  • 1/2 cup salted butter (1 stick)
  • 8 peperoncini peppers

Directions:

Heat up a large skillet. Add olive oil. Add chuck roast to sear, salt and pepper to taste.

Transfer chuck roast to crock pot. Sprinkle ranch dressing packet over roast. Sprinkle dry onion soup packet over roast. Place stick of butter on top of roast. Place 8 peperoncini peppers over roast. Place lid on crockpot.

Cook on low for 8 hours. Best served with red potatoes!

Greek Turkey Meatballs-Jenna (Alex’s Aunty Shakira’s Daughter)

Ingredients:

  • 1 pound ground turkey
  • 1 red onion
  • 12 ounce bag fresh spinach
  • 1 block feta cheese
  • 2 eggs
  • 1/4 cup Italian bread crumbs
  • 1-2 teaspoons each: salt, pepper, garlic powder, onion powder (or more!)

Directions:

Chop up red onion, spinach, and feta. If using a food processor, size doesn’t matter and chop onion and spinach separate. If mixing by hand, chop to a small size you are happy with. Mix all ingredients together (if using a food processor, stir in feta by hand).

Preheat oven to 350. Make meatballs (roughly 1 Tablespoon sized-an ice cream scoop works well). Bake in oven for 18-20 minutes, flipping halfway through (no need to flip if using a convection setting)

Shepherd’s Pie-Aunty Shakira (Alex’s Aunt)

Ingredients:

  • 1 1/2 pounds ground beef
  • 4 slices bacon-diced
  • 1 large onion-diced
  • salt and pepper to taste
  • 2-3 Tablespoons flour
  • 1 cup red wine
  • 1-2 cups beef stock
  • 2-3 Tablespoons tomato paste
  • 1 Tablespoon fresh rosemary-chopped
  • 4-5 large potatoes, mashed

Directions:

Make mashed potatoes, add salt and butter to taste.

In a large pan, saute the bacon until crisp. Remove and drain. Saute the onion in 1 Tablespoon bacon drippings and a little oil until translucent. Add ground beef. Brown, drain off excess fat. Add flour and saute 2-3 minutes. Add wine, stock, tomato paste, salt, pepper, bacon, and rosemary.

Bring to a boil, cover, and simmer on low for 15 minutes (at this time, add any veggies you like, peas, carrots, etc). Heat oven to 350. Pour meat into a 9X13 dish and top with mashed potatoes. Bake for 20 minutes until potatoes are heated through. Switch to broil and cook until potatoes are golden brown.

Beef & Salsa Burritos (Or Sloppy Joe)-Janet Brocklehurst (Alex’s Aunt)

(I have made this with just chicken and salsa and nothing else and it’s just as good)

Ingredients:

  • 1 pound ground beef (or chicken)
  • 1 1/2 Tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • 1 package (10 oz) frozen chopped spinach, thawed and well drained
  • 1 1/4 cup salsa
  • 1 cup shredded cheddar cheese

Directions:

Brown ground beef. Season with chili powder, cumin, salt and pepper. Stir in spinach and salsa-heat through. Remove from heat, stir in cheese. Serve as sloppy joe-with hamburger buns-or in tortillas as burritos.

Easy Korean Beef Rice Bowls-Heather Lee

Ingredients:

  • 4 cups cooked rice
  • 1 teaspoon sesame oil
  • 1 pound beef (we use steak, but the recipe calls for ground beef)
  • 3 cloves garlic
  • 4 Tablespoons soy sauce
  • 1 Tablespoon grated ginger
  • 3 Tablespoons brown sugar
  • A dash of sriracha hot sauce
  • 1 cup julienned (shredded) carrots
  • Chopped green onions, toasted sesame seeds, and red pepper flakes for garnish

Directions:

Prepare rice according to directions. Heat a large skillet over medium heat, add sesame oil. Add beef to hot skillet and brown until cooked through (6-8 minutes). Add garlic, soy sauce, ginger, brown sugar, and sriracha. Stir until sauce forms. Add carrots and cook until slightly tender. Serve over rice and garnish with chopped green onions, toasted sesame seeds, and red pepper flakes.

Spiced Rub Pork Tenderloin-Grandma Bev and Grandpa Bob Brocklehurst

Ingredients:

  • 1 1/4 pound pork tenderloin
  • Olive oil
  • 2 Tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt and pepper

Directions:

Preheat oven to 400. Line baking sheet with foil and spray with pam. Place tenderloin on foil and brush with a little olive oil. Mix in a small bowl: brown sugar, chili powder, garlic powder, and salt and pepper. Rub pork with spice mixture, coating all sides. Roast for 22 minutes, insert meat thermostat (135 degrees for med rare). Rest for 5 minutes before slicing. Serve with mashed potatoes, rice pilaf, or whatever you enjoy.

Poppy Seed Chicken

  • 6 Chicken Breasts
  • 1 Tube Ritz Crackers – crushed
  • 2 TBSP Poppy Seeds
  • 1/2-3/4 Cube of Butter
  • 1 Cup Sour Cream
  • 1 Can Cream of Chicken Soup

The recipe says to boil the chicken then let cool. I think you can do this recipe by just baking the chicken.

Mix together crushed Ritz Crackers, butter, and poppy seeds. Set aside.

Mix together sour cream and cream of chicken soup.

Dip chicken into sour cream soup mixture. Set in 9X13 pan. Pour remaining mixture over chicken. Sprinkle cracker mixture over the chicken.

Bake 350 degrees for 30 minutes.

Tomatoes over Rice

  • 1 can diced or crushed tomatoes depending on your preference
  • 1 pound ground beef
  • Cooked Rice

Brown ground beef. Drain. Add canned tomatoes and heat till hot.

Serve over rice.
