Calzone (see after recipe for other combinations)

Pizza dough (your favorite recipe)

1 pound sausage (mild or hot, cooked and crumbled)

1 pound mozzarella cheese, grated

1 green pepper

1 onion

pepperoni

olives, sliced

Divide pizza dough into 5-6 ounce pieces.  Roll out round to about 6″ diameter.  In center of dough place sausage, cheese, any other fillings you want from the above list or any others you like.  Pull dough around filling and pinch ends together.  Place on greased baking sheet.

Brush olive oil over the top of dough and sprinkle with grated parmesan cheese.

Bake in 350 degree oven for 15 minutes.

Serve with spaghetti sauce to dip.

Philly Cheese Steak Calzone

  • Thinly sliced, cooked steak
  • Mozzarella
  • Sauteed onions and green peppers

Tex-Mex Calzone

  • Black beans
  • Corn
  • Red onions
  • Shredded Mexican blend cheese
  • Salsa
  • Guacamole for serving

Meatball Calzone

  • Halved, cooked meatballs
  • Marinara sauce
  • Fresh basil
  • Shredded Parmesan

Garden Veggie Calzone

  • Cooked broccoli
  • Roasted red peppers
  • Sauteed mushrooms
  • Pesto
  • Shredded mozzarella

BBQ Chicken Calzone

  • Cooked chicken
  • Barbecue sauce
  • Shredded mozzarella
  • Sauteed red onions

Breakfast for Dinner Calzone

  • Scrambled eggs
  • Shredded Cheddar cheese
  • Hash brown potatoes
  • Cooked, crumbled bacon

Dessert Calzone

  • Chocolate hazelnut spread
  • sliced strawberries
  • dusting of confectioners’ sugar before serving

Meatballs

1  1/2 pounds ground beef

1/4 cup fresh bread crumbs

2 cloves garlic pressed or minced

1/4 cup parmesan cheese

1 teaspoon dried basil

2 Tablespoons water

1 egg

Salt

Pepper

Combine water and egg and mix a little.  Combine all the rest of the ingredients.  Form into balls and bake at 350 till done.  Time depends on size of balls.

You can fry in a dry pan instead, but baking them is so fast and easy and less messy.

Pork Roast – Uncle Rob

In a large pot or crock pot place:

Pork

2 teaspoons thyme

3 bay leaves

1/2 teaspoon oregano

1 teaspoon salt

pepper

6 cloves garlic

2 onions

4 stocks of celery

water to cover

If boiling on stove boil for 3-4 hours till forks apart

If in a crock pot 6-8 hours till forks apart.

Break meat in chunks and serve on rolls.  The juice makes a great gravy for mashed potatoes.  Take out the bay leaves first.

Another step we never do is

Break meat into chunks.  Add 1 cup milk and bake in oven for 1 hour.

Boil juice down to about 1 cup.  Pour over meat and bake another 30 minutes.

We think it is great without the extra steps.

Winger’s Sticky Fingers Copycat Recipe

1 package frozen breaded chicken strips

6 Tablespoons Franks Hot Sauce (It has to be Franks Hot Sauce, no other sauce will taste the same)

4 Tablespoons water

1  1/2 cups brown sugar

Prepare chicken strip as directed on package.  You can bake for less calories, but they taste more authentic fried.

Heat hot sauce, water, and brown sugar in a saucepan over medium heat, until sugar is dissolved.

Pour over chicken, and enjoy!  Can serve with ranch dressing for dipping or on a salad which is great with dried cranberries like at Winger’s.

Parmesan-Baked Salmon

1/4 cup mayonnaise

2 Tablespoons grated parmesan cheese

1/8 teaspoon ground red pepper (cayenne)

4 salmon filets (1 lb. each)

10 Ritz Crackers, crushed (about 1/2 cup crumbs)

Preheat oven to 400 degrees.

Mix mayo, cheese, and pepper until well blended; set aside.

Place salmon on foil-lined shallow baking pan.  Top with cheese mixture; spread to evenly cover salmon.  Sprinkle with cracker crumbs.

Bake 12-15 minutes or until salmon flakes easily with fork.

We like to grill instead.  Wrap in foil and place on grill till flakes easily.

Taco Bake

Ingredients

  • 1 lb Ground Beef
  • 1 pkg Taco Seasoning
  • 2/3 Cup Water
  • Chili Cheese Corn Chips- to taste
  • 1 Can Cheddar Cheese Soup
  • 1/2 Cup Milk
  • 8 to 12 oz Shredded Mozzarella
  • Toppings as desired

Instructions

  1. Brown ground beef and prepare as taco meat according to the seasoning package (using water).
  2. Pour enough fritos into a 9 x9 pan to cover the bottom.
  3. Top with taco meat.
  4. Combine soup and milk in a sauce pan and heat through until smooth.
  5. Top taco meat with cheese sauce.
  6. Top with cheese (8 oz to 12 oz depending on the level of cheesiness desired).
  7. Bake at 350 degrees for 10-15 minutes until bubbly.
  8. Serve over lettuce and with desired topics.

STROMBOLI BREAD

You can change ingredients to fit what you have and what you like.  Provolone is very good, but I usually use Mozzarella.  When I brought it to you I used Monteray Jack because that is what I had.

 

1 large recipe pizza dough

¼ lb each of:

ham, turkey, salami, pepperoni, mozzarella cheese, provolone cheese

½ cup finely chopped onion

½ cup finely chopped green pepper

1 pkg. frozen broccoli (cooked and drained)

¼  cup melted butter with ½ tsp. garlic salt added

 

Roll out dough to ¼ inch thick.  Brush with garlic butter.  Layer all ingredients, rollup, brushing dough with butter as you roll. Roll as tight as you can.  Put in horseshoe shape on greased cookie sheet.  Bake 25 minutes at 400 degrees until golden brown.  Slice and enjoy.
