Cottage Cheese Salad

  • 1 pint cottage cheese, small curd
  • 1( 3 oz) package Jell-O, any flavor
  • 1 (8 oz) container Cool Whip

Add Jell-O to Cool Whip and cottage cheese. Mix well. Chill to set and meld.

You can add fruit like strawberries or raspberries or even mandarin oranges or pineapple. If using frozen thaw and drain. If using canned drain.

Rainbow Salad

  • 1 (3 oz) lime, lemon, orange, raspberry, and strawberry Jell-O
  • 16 oz sour cream

Add 1 cup boiling water to lime Jell-O. Stir; divide in half. Add 2 Tablespoons water to 1/2 and pour into pyrex 9×13 cake pan. Tip pan to cover evenly. Set in fridge.

Add 1/3 cup sour cream to remaining half. Stir well and pour over set Jell-O. Tip to cover evenly. Chill.

Repeat process with other flavors.

Top with Cool Whip.

Smothered Chicken

Cut chicken into 1 or 2 inch pieces.

Dip into egg then bread crumbs.

Brown in oil on stove until cooked through.

Place in baking dish.

When chicken is all fried add 1 cup hot water or chicken broth and 1 cup of hot milk to baking dish. A little more if you have a lot of chicken.

Bake at 350 for 10-15 minutes or until the liquid is hot.

Make homemade egg noodles. Seve chicken and broth over egg noodles.

Pumpkin Pie

Combine:

  • 1 1/2 cups pumpkin (1/2 of a large can)(Store extra pumpkin in freezer in bags measured out for recipe because it only lasts about 1 week in the fridge)
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1/2 teaspoon cloves
  • 3/4 cups brown sugar
  • 1 1/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Blend in:

  • 3 eggs, slightly beaten (make sure and beat them before or you will have egg pieces in your pie)
  • 1 1/4 cups milk

Pour into unbaked pie crust. Bake at 400 degrees for about 50 minutes. It is done when a knife stuck in the middle comes out clean.

Makes one pie

Lime Chiffon Pie

  • 3 eggs, beaten
  • 1/2 cup lime juice
  • 1 can evaporated milk, chilled in the fridge
  • 1 1/2 cups sugar
  • 1/2 cup lime Jell-O (1 3 oz box)

Combine then boil beaten eggs, sugar, lime juice, and Jell-O 5 minutes and cool. Make sure to stir well the whole time to prevent scorching.

Chill thoroughly the can of evaporated milk. Shake then beat milk in large mixing bowl until thick like whipped cream.

Add cooled filling slowly to the whipped milk. Beat to mix thoroughly. Pour into baked crust or graham cracker crust.

Makes 2 9″ pies or 1 10″ pie.

Pie Dough (Pie Crust) – Great Grandma Morgenegg

  • 1/2 teaspoon salt
  • 1 cup shortening
  • 2 cups flour
  • 4-5 Tablespoons cold water

Sift the flour and salt together, then cut in the shortening with two knives or a pastry blender until the shortening is in small pieces about the size of large peas.

Add the water (make sure it is cold, Grandpa Morgenegg always added ice to it to make it cold) and stir just enough to mix.

Roll out on floured surface. Roll up to place in pan. If the dough breaks when first rolled out it won’t hurt to gather it up again and roll it out once more. Sometimes the first rolling is hard to handle. Fill with desired filling.

For the top do the same thing. When you have it on top cut slices in it for the steam to escape. Seal the edges with finger and thumb.

Bake at 475 for 8-10 minutes if cooking an empty pie shell. If cooking it empty also prick it all over with a fork to prevent it from bubbling up.

Hamburger Pie

  • 1 lb. ground beef
  • 1 small onion chopped
  • Can add any other vegetables you like – green peppers, carrots, peas, potatoes, etc.

Brown ground beef with onion then drain. When all browned at 1/3 -1/2 cup flour. Sprinkle on top and toss until covered.

Add chicken bouillon to 2 cups water and dissolve. Pour in with meat. You may need to add more water. The flour will thicken the chicken broth. Add vegetables. Add salt and pepper.

Put in uncooked pie shell and add top pie shell. Bake at 350 for 15-20 minutes on a low rack.

Let sit for 10 minutes.

I have have, but I have heard you can bake the pie shell a little before adding the filling to not have it soggy.

Meatloaf

  • 3 slices bread
  • 1 pound lean ground beef
  • 1 egg
  • 1 onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk
  • 1 cup catsup

Crumble bread or put in blender to make bread crumbs. Mix all ingredients well. Place in 8X8 pan.

Bake at 350 degrees for 45 minutes.

Cupcake Filling

  • 3 oz cream cheese
  • 1 egg
  • 1/2 cup sugar
  • chocolate chips

Mix all ingredients together. Fill cupcakes with batter then add a spoonful of filling. Or mostly fill with batter then add filling then top with more batter.

I usually double the recipe.

Taco Seasoning Mix

Mix:

  • 1/2 cup dry minced onion
  • 2 teaspoons salt
  • 2 Tablespoons chili powder
  • 2 Tablespoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 2 Tablespoons flour

Place in sealed container, store in cool dry place.

2-3 Tablespoons = 1 pkg. mix
