Fresh Apple Pie

8-inch

  • Pastry for top and bottom
  • 1/2 cup sugar
  • 3 Tablespoons flour
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • Dash of salt
  • 5 cups thinly sliced apples, peeled and cored (about 5 medium)

9-inch

  • Pasty for top and bottom
  • 3/4 cup sugar
  • 1/4 cup flour
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • Dash of salt
  • 6 cups thinly sliced apples, peeled and cored (about 6 medium)

Heat oven to 425 degrees. Prepare pastry dough and place bottom in pie pan. Mix sugar, flour, nutmeg, cinnamon, and salt. Stir in apples. Turn into pasty-lined pie plate. Cover with top crust. Cut slits into the top; seal the edges. Cover edge with 3-inch strip of aluminum foil; remove during last 15 minutes of baking. Bake until crust is brown and juice begins to bubble through the slits in crust, 40 to 50 minutes.

Tip: When baking pies bake close to the bottom of the oven. This will get the bottom crust to bake so it isn’t as soggy. If you are worried it will start to spill over and you will need to put a pan under it place the pie on the upper rack, but move it close to the bottom. Don’t put the pan under until you need to.

Apple Cake

  • 3/4 cup sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1/2 cup margarine
  • 2 cups flour
  • 3/4 cup milk

Mix all ingredients together. Makes dough a little stiffer than cake batter. Use sheet cake pan (cookie sheet or jelly roll pan). Grease pan, spread dough, the cup apples into slices not too thick and not too thin. Place them on the batter and dop with margarine. Sprinkle top with cinnamon and sugar.

Bake at 350 degrees until golden, about 20-30 minutes.

Apple Streusel Muffins

Makes 18 muffins

2 cups flour

1 cup sugar

1 1/4 teaspoon ground cinnamon

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1 8 ounce carton of sour cream

1/4 cup margarine or butter melted

1 cup finely chopped apples

Streusel Topping

1/4 cup sugar

3 Tablespoons flour

1/4 teaspoon ground cinnamon

2 Tablespoons margarine or butter

  1. Preheat oven to 400 degrees. Generously grease 18 muffin cups or line with paper.
  2. In a large bowl, stir together flour, sugar, cinnamon, baking powder, baking soda, salt.
  3. In a small mixing bowl, beat eggs. Stir in sour cream and 1/4 cup melted butter. Add egg mixture to the flour mixture along with the chopped apples. Stir just until moistened.
  4. Spoon batter into muffin cups filling 2/3 full.
  5. To make the Streusel Topping: In a small bowl, stir together sugar, flour, and cinnamon. Using a pastry blender, cut in 2 tablespoons butter until the mixture resembles coarse crumbs. Sprinkle a portion of the topping on each muffin.
  6. Bake for 20-25 minutes until the tops are golden.

Apple Cake

1 cup sugar

1  1/2 cup flour

1 teaspoon baking powder

1/2 cup shortening

1 egg

3/4 teaspoon salt

1 teaspoon baking soda

2 cups grated apples

 

Mix all together.  Spread in greased 9X13 pan.

Mix 1/2 cup brown sugar, 1/2 teaspoon cinnamon, 1/2 cup nuts.

Sprinkle on top.

Bake 350 degrees for 30-40 minutes.

Top with ice cream or whipped topping

Garlic Apple Pork Roast

1 boneless whole pork loin roast (3 1/2 – 4 pounds)

1 jar (12 ounces) apple jelly

1/2 cup water

2 1/2 teaspoons minced garlic

1 Tablespoon dried parsley

1 to 1  1/2 teaspoons season salt

1 to 1  1/2 teaspoons pepper

Cut the roast in half; place in slow cooker.  In a small bowl, combine the jelly, water, and garlic; pour over roast.  Sprinkle with parsley, salt, and pepper.

Cover and cook on low for 8 to 8  1/2 hours or until meat thermometer reads 160 degrees and meat is tender.  Let stand for 5 minutes before slicing.  Serve with cooking juices if desired.
