Soft Caramels (Bailie Jaques)

  • 4 cups sugar
  • 2 sticks butter
  • 2 cups white corn syrup
  • Flakey Kosher salt
  • 2 cans evaporated milk
  • Parchment paper

In a big pot melt together sugar, butter, and corn syrup.

Bring to a boil stirring constantly.

Add 2 cans of evaporated milk very slowly while constantly stirring.

Bring to 235-238 degrees.

Pour into a 9×13 pan lined with parchment paper, sprinkle with salt.

Cool in fridge. Cut and roll in parchment paper.

Caramel Rice Krispie Treats-Nan Abel

Ingredients

  • 2 bags mini marshmallows
  • 2 cubes of butter
  • 1 can eagle brand milk
  • 1 package 12-16 ounce caramels

Make rice Krispie treats:

  • 3/4 bag marshmallows
  • 3/4 square butter
  • 8 cups krispies

Press into pan (Jelly roll pan works best!) Melt 1/4 of each square of butter, milk, and caramels. Put 1/3 of each marshmallow bag on rice krispie, pour caramel over top. Make 2nd batch of rice krispie, press on top. Enjoy!

Kneaders caramel syrup

  • 1/2 cup butter, softened (Don’t know why it says softened since you melt it in pan. Also we tried with 1/2 the butter and it tastes great and isn’t as bad for you.)
  • 1/2 cup buttermilk
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 tsp baking soda

Heat an empty medium or large empty stockpot over medium high heat. Make sure the sides of the pot or pan are tall to prevent the syrup from bubbling over.

Melt the butter in the heated pan and stir in the buttermilk and sugar. Bring the mixture to a rolling boil and boil for one minute.

Remove the pan from heat and whisk in the vanilla and baking soda. The mixture will bubble and grow. That’s okay! Keep whisking until the bubbles are gone and the mixture reaches a caramel syrup consistency.

Turtles – Grandma Dennis

  • 1 1/2 cup flour
  • 1 1/2 cup oats
  • 1 1/2 cup brown sugar
  • 1 cup butter or margarine
  • 1/3 teaspoon salt
  • 2/3 teaspoon baking soda
  • 7 1/2 Tablespoons milk
  • 48 caramels (1 lb.)
  • 6 oz chocolate chips (milk chocolate)

Mix together flour, oats, salt, soda, brown sugar, and butter. Mix until crumbly. Pat half of the mixture into ungreased 9X13 pan. Bake at 350 degrees for 10 minutes.

Melt in saucepan the milk and caramels. Sprinkle chocolate chips on top of the baked mixture. Drizzle caramel over top. Sprinkle reserved crumbs over all. Bake at 350 for 15 minutes.

Caramel Popcorn – Grandma Dennis

  • 3 cups brown sugar
  • 1 1/4 cup corn syrup
  • 1 cube margarine
  • 1 can 15 1/2 oz sweetened condensed milk
  • 3 gallons popcorn

Boil sugar and syrup. Then add the milk, when it boils again add margarine. Cook to soft ball stage. (Whenever I cook it it is too hard. Maybe cook to a little lower than soft ball?)

Pour over popped popcorn and stir till all coated.

Spread on cookie sheet till cool.

Store in airtight container.

Turtle Cake

1 Box German Chocolate cake mix, mixed according to directions on box, but not yet baked.

48 Kraft Caramels (1   14-oz bag)

1/2 Cup evaporated milk

2 Cups pecans, chopped

3/4 cup (1   1/2 sticks) butter (not margarine)

2 Cups semi-sweet chocolate chips

Whipped cream, for topping

Grease and flour 9X13 baking pan.  Preheat oven to 350 degrees.  Pour half the cake batter into the prepared pan.  Bake 15 minutes.

While the cake in baking, melt the caramels, milk, and butter in a large saucepan over medium heat.  Pour the mixture over partially baked cake.  Sprinkle half the pecans and half the chocolate chips over the caramel mixture.  Pour the rest of the batter over that.  Sprinkle the rest of nuts and chocolate chips on top.  Bake 20 more minutes.  It won’t look quite done when it’s finished, but it will firm up when it sets.  (It tastes better the second day!) Serve topped with whipped cream.

Microwave Caramel Popcorn – Sharon Palmer

16 cups popcorn, popped, set aside

Place in glass bowl:

1 Cup brown sugar

1/2 cup butter (not margarine)

1/4 cup light corn syrup

Cook 2 minutes in microwave.  Stir and cook 3 more minutes.

Add 1/2 teaspoon baking soda and 1 teaspoon vanilla.

Place 1/2 of the popcorn in a large paper grocery bag and add 1/2 of the syrup; then add the rest of the popcorn and the rest of the syrup.  You can add peanuts here if desired.

Shake.  Microwave 1 minute.  Take out and shake.  Microwave 1 minute.  Take out and shake.  Microwave 30 seconds.  Take out and shake.  Microwave 30 seconds.  Take out and shake.  Pour out on cookie sheet.

You can also add M&M’s, pretzels, etc.
