Crepes – Stephanie’s for on a pan

Ingredients 

  • 2 cups milk
  • 4 large eggs
  • 3 Tablespoons unsalted butter , melted and slightly cooled
  • 1 Tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine sea salt or table salt
  • 1 ½ cups all-purpose flour , sifted if desired

Instructions

  • In a blender, blend milk, eggs, butter, sugar, vanilla, salt, and flour 15 to 20 seconds, or until batter is smooth. You could also whisk in a bowl. Refrigerate at least 30 minutes, or overnight.
  • Heat an 8-inch frying pan over medium-low heat. Pour about 1/4 cup batter into the pan, tilting pan immediately from side to side to form an even circle. Cook about 1 minute per side, or until lightly browned. Remove from heat and stack until ready to serve. Repeat with remaining batter.
  • Serve with your favorite toppings. Fresh fruit, jams, pudding, Nutella, whipped topping and nuts are a few of our favorites.

We made 1 1/2 times for 7 people and had a perfect amount of extras for leftovers.

Cheesecake Crepe Filling

  • 8 oz cream cheese
  • 1/4 cup sugar
  • 1/4 cup sour cream (full fat)
  • 1/2 teaspoon vanilla extract
  • 1/2 Tablespoon lemon juice

With a mixer on high speed, mix cream cheese with 1/4-1/3 cup sugar until creamy and smooth, 2-3 minutes. Mix in vanilla, lemon juice, and sour cream. This filling is not very sweet because it’s meant to be complimented with fresh berries or a berry sauce.

Manicotti Crepes – Grandma Morgenegg

Pasta:

  • 2 cups flour
  • 1/2 cup olive oil
  • 2 large eggs
  • 2 cups water (and a little, I like a thin batter)
  • 1/8 teaspoon salt

Mix well with mixer, until smooth. Cook in crepe pan or small skillet until light tan, not brown like a pancake. Stack alternating stacks on a place until all are cooked.

Filling:

  • 2 lbs ricotta cheese (or cottage cheese)
  • 3 eggs
  • 1/2 cup parsley, chopped (1/4 cup dried parsley flakes)
  • 1 cup Parmesan Cheese
  • 1 lb. Mozzarella Cheese

For a full recipe of pasta I found you only need 1/2 a recipe of filling.

Mix well and fill shells with a line of filling down the middle. Then roll like enchiladas. Put in pan with spaghetti sauce on the bottom. Cover with sauce. Bake at 350 degrees for 30 minutes. Can sprinkle with cheese last 5 minutes. Can use spaghetti sauce with meat.

Crepes – Grandma Dennis’

1 cup flour

2 eggs

1/2 cup water (will need more water if not using crepe maker pan to get them to spread out on fry pan)

1/4 tsp salt

2 TBS melted butter

Place ingredients in blender in order.  Mix 30 seconds.  Stop, stir down sides.  Mix 30-60 seconds until smooth. I have a ninja so I put in the water first then the other ingredients so it doesn’t stick to the bottom of the blender.

Makes 16 crepes

This is for use with the crepe maker you dip into the batter. If pouring into a pan you need to thin it out quite a lot.
