Hamburger/Veggie Soup-Janet Brocklehurst (Alex’s Aunt)

(I make this all the time)

Ingredients:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 boxes beef broth
  • 2 cans beef consume soup
  • 3 carrots, sliced
  • 3 celery ribs, sliced
    • (or I have used packages of frozen soup veggies)
  • 1 can fire roasted tomatoes, diced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 Tablespoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

Brown beef and onion, drain. Cook everything together until soft.

I usually make it in a big stock pot on the stove, but could put everything in a crock pot.

Stuffed Green Peppers

  • 6 large green peppers
  • 1 pound hamburger
  • 2 Tablespoons chopped onions
  • 1 teaspoon salt
  • 1/8 teaspoon garlic
  • 1 cup cooked rice
  • 1 can (15 oz) tomato sauce
  • 3/4 cup shredded mozzarella cheese

Cut thin slice from the stem end of each pepper. Remove seeds and membrane, rinse.

Place pepper cut side up in an ungreased 9 or 10 inch glass pie plate. Cover with plastic wrap; microwave until hot 3-3 1/2 minutes.

Mix cooked rice, uncooked hamburger, onion, salt, garlic salt, and 1 cup of tomato sauce. Stuff each pepper with about 1/2 cup hamburger mixture. Pour remaining sauce over peppers.

Cover with plastic wrap; microwave 6 minutes. Turn plate 1/4 turn; microwave until mixture is done, 6-7 minutes longer. Is your microwave has a turn table microwave 12-13 minutes until hamburger is done. Sprinkle with cheese.

Hamburger Pie

  • 1 lb. ground beef
  • 1 small onion chopped
  • Can add any other vegetables you like – green peppers, carrots, peas, potatoes, etc.

Brown ground beef with onion then drain. When all browned at 1/3 -1/2 cup flour. Sprinkle on top and toss until covered.

Add chicken bouillon to 2 cups water and dissolve. Pour in with meat. You may need to add more water. The flour will thicken the chicken broth. Add vegetables. Add salt and pepper.

Put in uncooked pie shell and add top pie shell. Bake at 350 for 15-20 minutes on a low rack.

Let sit for 10 minutes.

I have have, but I have heard you can bake the pie shell a little before adding the filling to not have it soggy.

Chinese Hamburger

1 pound hamburger

1 can cream of chicken soup

1 can cream of mushroom soup

1 can water

1 1/2 cups minute rice

1 Tablespoon soy sauce

Brown ground beef.  Mix the rest of the ingredients together in the pan and cook on stove until rice is done.  15-20 minutes.

Hungry Man Pasta

1 Package spaghetti or angel hair pasta whichever you prefer

1 lb Ground beef (We use less)

½ Stick of butter or margarine

4 Cloves garlic (or 2 tsp minced garlic)

¼ Cup parsley flakes

1 Can black olives, sliced

1 or 2 Tomatoes, diced

1 cup Parmesan cheese

Salt and pepper

 

Brown ground beef and season to taste with salt and pepper.  Boil pasta then drain.  Set aside beef and pasta.

 

Sauté butter and garlic in pan you cooked pasta for 2 minutes.  Put pasta back into the pan and add parsley and mix it all together.

 

Dish up pasta and serve with beef, tomatoes, olives, and Parmesan cheese to your liking.
