Greek Turkey Meatballs-Jenna (Alex’s Aunty Shakira’s Daughter)

Ingredients:

  • 1 pound ground turkey
  • 1 red onion
  • 12 ounce bag fresh spinach
  • 1 block feta cheese
  • 2 eggs
  • 1/4 cup Italian bread crumbs
  • 1-2 teaspoons each: salt, pepper, garlic powder, onion powder (or more!)

Directions:

Chop up red onion, spinach, and feta. If using a food processor, size doesn’t matter and chop onion and spinach separate. If mixing by hand, chop to a small size you are happy with. Mix all ingredients together (if using a food processor, stir in feta by hand).

Preheat oven to 350. Make meatballs (roughly 1 Tablespoon sized-an ice cream scoop works well). Bake in oven for 18-20 minutes, flipping halfway through (no need to flip if using a convection setting)

Sweet and Sour Meatballs

3 Tablespoons cornstarch

3/4 cup brown sugar

1  20 ounce can pineapple tidbits, drained, but save the syrup

1/3 cup and 5 Tablespoons vinegar

1  1/2 Tablespoons soy sauce

1/2 to 3/4 cup chopped green pepper

Meatballs (I buy frozen and thaw in the microwave)

 

Mix cornstarch and sugar in saucepan with a fork.  Stir in pineapple syrup reserved from the pineapple, vinegar, and soy sauce.  Stir until smooth.

Cool over medium heat stirring constantly until thickens and boils.  Boil and stir 1 minute.

Add meatballs, pineapple tidbits, and pepper.

Serve over rice.

Meatballs

1  1/2 pounds ground beef

1/4 cup fresh bread crumbs

2 cloves garlic pressed or minced

1/4 cup parmesan cheese

1 teaspoon dried basil

2 Tablespoons water

1 egg

Salt

Pepper

Combine water and egg and mix a little.  Combine all the rest of the ingredients.  Form into balls and bake at 350 till done.  Time depends on size of balls.

You can fry in a dry pan instead, but baking them is so fast and easy and less messy.
