{"id":1442,"date":"2025-07-14T21:49:19","date_gmt":"2025-07-14T21:49:19","guid":{"rendered":"https:\/\/dennisrecipes.morgeneggs.com\/?p=1442"},"modified":"2025-07-14T21:49:19","modified_gmt":"2025-07-14T21:49:19","slug":"easy-pecan-pie-bars-nicole-brooksby-brittneys-friend","status":"publish","type":"post","link":"https:\/\/dennisrecipes.morgeneggs.com\/index.php\/2025\/07\/14\/easy-pecan-pie-bars-nicole-brooksby-brittneys-friend\/","title":{"rendered":"Easy Pecan Pie Bars-Nicole Brooksby (Brittney&#8217;s Friend)"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<p>Shortbread crust (Double the crust recipe!!)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2 cup butter<\/li>\n\n\n\n<li>1\/4 cup granulated sugar<\/li>\n\n\n\n<li>1\/4 teaspoon salt<\/li>\n\n\n\n<li>1 teaspoon vanilla extract<\/li>\n\n\n\n<li>1 cup all purpose flour<\/li>\n\n\n\n<li>2 Tablespoons cornstarch<\/li>\n<\/ul>\n\n\n\n<p>Pecan pie filling<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 eggs<\/li>\n\n\n\n<li>3\/4 cup brown sugar<\/li>\n\n\n\n<li>1\/2 cup light corn syrup<\/li>\n\n\n\n<li>1\/4 cup heavy cream<\/li>\n\n\n\n<li>1 teaspoon vanilla extract<\/li>\n\n\n\n<li>1\/2 teaspoon salt<\/li>\n\n\n\n<li>1 teaspoon cornstarch<\/li>\n\n\n\n<li>1 1\/2 cup pecans chopped<\/li>\n<\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<p>Preheat the oven to 325 then line an 8X8 pan with parchment paper and set aside.<\/p>\n\n\n\n<p>In a large bowl, add in the flour, salt, and cornstarch and mix. Add in the cold butter and work it into the dough with your hand or a pastry cutter until cookie dough forms. Press onto the prepared baking pan and bake in the preheated oven for 20 minutes. <\/p>\n\n\n\n<p>In a separate large bowl, mix the eggs, brown sugar, light corn syrup, heavy cream, salt vanilla extract, and cornstarch until combined. Stir in the pecan pieces.<\/p>\n\n\n\n<p>Once the crust is done baking pour the pecan pie filling on top of the crust and bake for 30-35 minutes. The edges will brown a little and the center will be barely jiggly<\/p>\n\n\n\n<p>Remove from the oven and let cool completely before transferring to chill in the fridge for at least 30 minutes.
